Recommendations to Inspire Fall Fun

I have fond memories of my dad making Coconut Cream Pie. He would double the batch so we could just eat the filling in a bowl – maybe that's why I never perfected a good crust!
Recipe for John's Coconut Cream Pie
- 4 tablespoons of cornstarch
- 3/4 cup of sugar
- 1/8 teaspoon of salt
- 2 cups of milk
- 2 eggs
- 1 tablespoon of butter
- 1 teaspoon of vanilla
- 1 cup of coconut (or more if you like)
Mix the cornstarch, sugar and salt. Gradually add to cold milk in a saucepan. Stir constantly over medium heat until mixture is thick and bubbles (4-5 minutes). Beat eggs slightly and add part of the hot mixture to the beaten eggs. Blend and return to the saucepan. Cook, stirring constantly, for 2 minutes. Remove from heat and blend in butter. Add vanilla and coconut.
Cool and pour into baked 4-inch pie shell. Toast some coconut in the oven to sprinkle on top, or use whipped cream to your liking.
